Light Homemade French Style Salad Dressing


When I was a teenager I was friends with 2 sisters from a family of 8.  I had countless dinners at their table and always loved the salad that began the meal because of the awesome dressing.
My friends and I would make a new bottle of it almost before every meal and I admit to always having a hearty portion!  It was so good.  Flash forward several years and I had a house of my own with a craving for this dressing.  I emailed my friend for the recipe and she got it from her mom for me.  However, when I got it I was dismayed at how much oil went into it and started working on a modified version that would be just as thick and full of flavor with half fat.  (They were a family full of runners and it was never an issue for them!)  Now my family loves it too.  Even Miss B at age 3 will eat a full bowl of salad with a little dish of it to dip it in!
It is called a Spinach Dressing, but it's good on every kind leafy green I have put it on.  It tastes kind of like French or Western Dressing, but I like it much better.
Ingredients: 
3/4 cup sugar
1/3 cup ketchup
1/3 cup vinegar (apple cider vinegar or red wine vinegar)
1 tsp. Worcestershire sauce
1 tsp. salt
1 TBSP minced onion (optional)
Sprinkle of garlic powder or 1 minced clove of garlic
1/2 cup of oil
1/2 cup of water (divided)
2 tsp. cornstarch
Directions:
Combine sugar, vinegar, Worcestershire sauce, salt, minced onion, garlic, ketchup & 1/4 cup of water in a pot & bring to a boil.  Mix together 1/4 cup of water and cornstarch.  Whisk it into the boiling mixture and cook for 30 seconds more.  Remove from heat and whisk in the oil.  Done!
